Ok, I admit.... I forgot about the recipe......
Anyway, here it is....
Egyptian Lentil Soup
1/4 cup butter
1 cup celery
1 cup sliced carrot
1/2 cup chopped onion
1 cup lentils
2 cloves garlic, minced
1 bay leaf
2 cups chicken stock
1 tomato, peeled and chopped
1 teaspoon salt
1/4 teaspoon pepper
Melt butter, add vegetables, garlic and bay leaf. Saute until tender. Add remaining ingredients and enough water to cover. Simmer until lentils are tender, about 30 minutes. Puree in blender.
This recipe is an excellent to serve as a side with the lentils.
Brown Rice Salad with Dates and Oranges
Stir together in a large bowl:
3 cups cooked brown rice
16 dates, pitted and diced
2 large navel oranges, peeled, divided into segments, each segment cut into thirds
2 scallions, minced
1/4 cup raisins
1/4 cup minced fresh parsley
1/4 cup extra-virgin olive oil
2 Tablespoons fresh lemon juice
1/4 teaspoon ground cinnamon
1/4 teaspoon ground cumin
Pinch or red pepper flakes
Salt to taste
Serve at room temperature.
My husband even ate these..... and he is kinda picky. The soup doesn't look all that appetizing, but it is delicious!
