Ok, I admit.... I forgot about the recipe......


Anyway, here it is....


Egyptian Lentil Soup



1/4 cup butter
1 cup celery
1 cup sliced carrot
1/2 cup chopped onion
1 cup lentils
2 cloves garlic, minced
1 bay leaf
2 cups chicken stock
1 tomato, peeled and chopped
1 teaspoon salt
1/4 teaspoon pepper


Melt butter, add vegetables, garlic and bay leaf. Saute until tender. Add remaining ingredients and enough water to cover. Simmer until lentils are tender, about 30 minutes. Puree in blender.


This recipe is an excellent to serve as a side with the lentils.

Brown Rice Salad with Dates and Oranges

Stir together in a large bowl:

3 cups cooked brown rice
16 dates, pitted and diced
2 large navel oranges, peeled, divided into segments, each segment cut into thirds
2 scallions, minced
1/4 cup raisins
1/4 cup minced fresh parsley
1/4 cup extra-virgin olive oil
2 Tablespoons fresh lemon juice
1/4 teaspoon ground cinnamon
1/4 teaspoon ground cumin
Pinch or red pepper flakes
Salt to taste

Serve at room temperature.

My husband even ate these..... and he is kinda picky. The soup doesn't look all that appetizing, but it is delicious!

I make lentil soup ALL the time. I've had such an aversion to meat that I'm trying to find other things with lots of protein. I never thought of sauteeing the veggies before hand? I usually just put everything all together in water and boil it up. I'll have to try that next time! Do you use the red or the green lentils? I grew up eating the green ones but I recently tried the red lentils and love that instead! I also add cumin and lemon juice to the soup when serving it. Yummm.

They are the green ones, the red ones are very hard to find around my area for some reason. Have you ever tried the black ones?? They are good too.

Do you have a meat aversion because you are pregnant? I could barely eat it at all while pregnant... and only chicken!

Yes!! LOL Major meat aversion and I used to be a huge carnivore. I can hardly stand it anymore. I seriously have to force myself to eat it.

I've never seen the black ones?? Hmmm... i'll have to look for those.

You're right..the red ones are hard to find. The best luck I have is an international market.

The only place I have found the black ones were at Trader Joe's.

All meat had a super metallic taste to me when I was pregnant. I actually talked to the dietician that I worked with to give me some advice on what else to eat to make up the protein. Helped alot!!
